Raw Food Diet Recipes: Essene Bread
This is a great bread to serve a Sunburger on (delicious with some home grown sprouts and sliced tomatoes!) and it will probably quickly become one of your staples on a raw foods diet. You can vary the spices depending on your mood. It takes a while to make, however, so you may want to double or even triple the recipe. I make this every few days, and I never seem to tire of it!
ESSENE BREAD
Ingredients:
4 cups of soaked wheatberries
1/2 cup to to 1 cup of minced veggies
2 T spices (minced garlic, caraway seed, poppy seed, sesame seed, for example)
Instructions
Soak the wheatberries for 15 hours and then drain thoroughly for another 10-12 hours. Grind the wheatberries and then add your minced veggies and spices. Form into a loaf shape, and then “bake” in the sun or any warm place (70-90 degrees F) until firm (usually takes between 12-24 hours). Bread may need to be turned at least once so that the bottom will dry.

Can you place it in the dehydrator? Or does the sunlight play a roll in creating the bread texture? Do some veggies work better than others. I have several cracker recipes I love, but I haven’t quite nailed a raw bread that I’m thrilled about. I’m excited to try this one. Thank you.

Yes, you can, sunlight is not absolutely necessary – just easier since many people don’t have a dehydrator. Give it a try, though, it should work fine! Thanks for asking
